At the stoves for the ShortCookingRaces by Towant
Gianandrea Barreca was chef for a night during the “ShortCookingRaces 2017 – The Fast Cooking Races of Italian Architecture” by Towant Architectural Events at the Siematic showroom in Milan.
Each recipe is a project, the kitchen is a construction site. After the Foodies’ Challenge’s experience, we have accepted a new culinary challenge this year, and we have worked on the reworking of the classic paella recipe suggested by Chef Umberto Zanassi: we have included ingredients that represent the different regional and international origins of our studio’s team. ShortCookingRaces is an initiative by Towant and SieMatic, in collaboration with Frigo2000, GaravagliaArredamenti, VZug and MarmoArredo.

“PAELLA & LA VARRA”
Paella of seafood with turmeric, pecorino romano and carasau bread
Ingredients for 4 people:
200 g parboiled rice
3 dl of light stock
1 teaspoon of ground turmeric
8 shrimps
100 g of cuttlefish
100 g of cooked chickpeas
100 g of peas
80 g of cherry tomatoes
12 raisins
1 sheet of Sardinian Guttiau bread
1 tablespoon of pine nuts
120 g of flaked Roman pecorino cheese
EVO oil, salt, pepper q.b.
